بازنمایی هویت در الگوی خوراک بررسی اتنوگرافیک تغییرات الگوی خوراک در میان مهاجران افغان بر اثر تجربه مهاجرت به ایران

چکیده

غذا و خوراک به همراه فولکلور، موسیقی و زبان به عنوان مهمترین شاخص­های هویت اجتماعی و نماد باور فرهنگی انسان تلقی می­گردند. مهاجرت و جنگ از مهمترین عوامل تاثیرگذار بر تغییرات رژیم غذایی بوده که منجر به تاثیرات گسترده اجتماعی و فرهنگی می­شوند. این مقاله با روشی اتنوگرافیک درصدد واکاوی تاثیرات مهاجرت بین­المللی بر بازتعریف الگوی خوراک به عنوان بیان نمادین حضور در میان مهاجران افغان (با تاکید بر قوم تاجیک) در ایران می­باشد. برای گردآوری داده­ها از 58 مصاحبه نیمه­‌ساختار­یافته، مشاهده مشارکتی و بررسی­‌های اسنادی استفاده شده است. روش تحلیل موضوعی برای تحلیل داده­ها مورد استفاده قرار گرفته است. غذا به عنوان زبان اجتماعی، بار معنایی گسترده­تری نسبت به خوردن و آشامیدن صرف داشته و به عنوان عاملی تاثیرگذار در شناخت بافت فرهنگی جامعه مهاجران افغان و همچنین شاخص تحلیل در شناخت مفهوم «خود» می­باشد. مهاجرت به ایران منجر به تغییر در سطوح مختلف زیست فردی و گروهی مهاجران افغان شده و در عرصه خوراک منجر به تغییر در مواد غذایی مورد استفاده، دایره واژگان، دستور پخت و ابزارهای مورد استفاده گشته است. همچنین انتخاب­ها و ترجیحات غذایی مهاجران بیانگر حالات، روایتگر داستان­های تاریخی و فرهنگی آنان بوده و مفاهیم قومیت، هویت ملی و کنش اجتماعی «خود» در برابر«دیگری» به صور گوناگونی توسط فرایند روزانه تولید خوراک در میان مهاجران افغان در جامعه میزبان بازتولید می شوند.
